    Batters

    Batters are suspensions of solids in liquids that form a strong bond between the substrate and the breading. If the batter does not allow a homogeneous union, gaps may occur in the product, affecting the quality and appearance of the finished product.

    Principal functions:
    • Outer covering: tempura, corn dogs
    • Bonding layer between substrate and breading

    Pre Dust

    Mixture of flours or fine bread crumbs, which help to condition the substrate to improve the adhesion of the covering system, ensuring an optimal union between the different layers of covering.

    • Fix adhesion problems
    • Add seasonings to topping systems
    • Increase the “pick-up” of the coverage
    • Improves uniformity of coverage.

    Traditional or homemade flavor breader, specially designed to provide characteristics of color, appearance, texture and flavor.
